It's National Strawberry Ice Cream Day!

Did you know that every year on January 15th strawberry flavored ice cream is honored in America? Strawberry ice cream is one of the top 3 most popular ice creams. The top 3 flavors are Vanilla, Chocolate and then Strawberry. Thats insane that the 3 most basic ice cream flavors are the top 3. These three flavors are the OG's of ice cream and are even combined in a flavor called Neapolitan.

 

History of Strawberry Ice Cream

Strawberry ice cream is one of the first ice cream flavors ever created. It was first served in 1744. That's a longgggg time ago, to think people were thinking about creative ways to jazz up some ice cream even then. Most strawberry ice creams today add coloring pink or light red so that it looks "More Strawberry". While strawberry ice cream is made by blending fresh strawberries (The healthier route) or strawberry flavoring with eggs, cream, vanilla and sugar. There has to be an alternative for vegans, RIGHT?

 

Vegan Strawberry Ice Cream

For the consumers that don't or cannot eat dairy there are many alternatives and more becoming available as we speak. From Oatly, to So delicious, Planet Oat and so many more you can also just make your own (This is what I always recommend). 

Vegan Strawberry Ice Cream Recipe:

STRAWBERRY PRESERVE

  • 1 cups diced ripe strawberries 
  • 1 Tbsp agave or maple syrup
  • 1-2 Tbsp water 

*You can always just order our Strawberry jam as well and skip this step

ICE CREAM

    • 2 (14-ounce) cans of unsweetened coconut milk 
    • 1.5 tsp cornstarch (or neutral starch of choice)
    • 1 Tbsp pure vanilla extract
    • 1/8 cups of diced strawberries

 STEPS:

  1. Mix Strawberries (1 cups), agave or maple syrup (1 Tbsp), water (1-2 Tbsp) and Cornstarch (1.5 tsp) and blend in blender or food processor  and set aside. (Can also use our Strawberry preserve)

  2. Whip coconut milk (2- 14 oz cans) in a bowl until thick (about 10- 15 mins)
  3. Add Vanilla Extract (1 Tbsp).
  4. Add Strawberry preserve to coconut mixture.
  5. Add condensed coconut milk (10 oz) and blend on low until mixed well
  6. Add diced ripe strawberries (1/8 cup) and mix with spoon. 
  7. Place in container of choice and in freezer for 6 hours minimum
  8. When ready thaw for 5-10 minutes and Enjoy!
